Moist and Delicious! That is what you get when you combine pumpkin with chocolate chips. No one can resist the cakey goodness of them!
Here is he recipe;
1 C. of Butter, softened (2 sticks)
1 C. sugar
1 C. light brown sugar
2 large eggs
1 C. canned pumpkin
1 tsp vanilla
3 C. all purpose flour
2 tsp baking soda
1/2 tsp salt
2 tsp pumpkin pie spice (tip; if you have a Trader Joes, they have the best price by far!)
2 C. chocolate chips
1/2 cup walnuts, chopped (optional)
Cream the butter with the sugars, add the two eggs and completely combine.
Stir in the pumpkin, then the vanilla.
Add all the rest of the dry ingredients.
Using a small ice cream scoop found in the kitchen supply area of any department store. Put scoopfulls on your Silpat or Parchment paper
Back for 12 to 15 minutes at 350.
To test for doneness, lightly touch the middle, they should be just set and uniform in color. These are so good with coffee or tea.
You can make them smaller and sandwich cream cheese or maple buttercream between them for a fancy cookie.
